Dr. Andy Meharg’s research at the Institute of Global Food Security within Queens University, Belfast focuses on the speciation of toxic trace elements in grain crops and wild grasses. Rice has the highest concentration of inorganic arsenic (a human carcinogen) when compared to other grains. Dr. Meharg points to future legislation by agencies including the US Food and Drug Administration (FDA) and the UK Food Standards Agency (FSA) as the biggest drivers for quantifying inorganic arsenic in rice.
